I love coffee cake. Especially the old school Starbucks Classic Coffee Cake. But for some reason they don’t taste like the ones I used to have back in the old days.
When I lived in Tacoma WA during elementary school, the ballet academy I went to had a really big Starbucks right beside it. My dad used to take me in to grab bakery snacks after ballet class and the two that I remember are butter horns and coffee cake. Eating this cake reminds me of when I went to school in Tacoma and of the ballet teachers that taught me back then.
It makes me feel all warm and cozy inside and reminds me of the days I didn’t have to worry about paying the bills or having to do house chores all the time. It was the good, young and don’t know anything but ballet and school days.
The copycat recipes that I found online didn’t meet my standards of the “original” coffee cake that I remembered. So I took 3 recipes that I found online and mixed them up a bit.
The top crumbly part was supposed to feel a bit crunchy, yet chewy and the bottom cake part was supposed to be like the bread part of a fruit cake but a bit more fluffy.
The ones I made back in Vancouver at my mom’s house didn’t turn out like I wanted them too cause I used a toaster oven to bake them. She didn’t have an oven so that’s what I used. Now that I have a proper oven I feel like I can make the best coffee cake I want. Then one exactly like the one I had at that Starbucks in Tacoma.
And guess what. I did make it. I made it so well that it amazed me too!
Uh. This homesick thing is starting to eat me up. So much for a “new years resolution” of getting down to 50 kgs. 아 다이어트 망했다.
